WELCOME TO BEEF SCHOOL

Good beef is decided long before it reaches your kitchen. What happens next is up to you - and it has less to do with recipes than with understanding what heat does to meat.

Cooking is chemistry. A steak browns because sugars and amino acids react on its surface once it passes about 140°C.

A cheek turns from tough to fall apart because its collagen slowly converts to gelatine over hours, not minutes.

A steak keeps climbing in temperature after it leaves the pan. Once you know why these things happen, you stop following instructions and start making decisions.

That is what Beef School is for. No secret tricks and no kitchen myths dressed up as technique - just the science behind every cut we pack, translated into what to do at the stove.

We think hard about the beef before it reaches you: the breed, the animal's maturity, how far it travels, how long it ages. Beef School is how that thinking carries on in your kitchen.

THE CUT GUIDES

Holding an unfamiliar cut thinking, "What do I do with this?" Don't worry - before we started this journey we didn’t even know many of these cuts existed, let alone where they came from or how to cook them.

Traditional prime cuts make up just 10% of an animal. Because we utilise the whole carcase, you get the classics alongside rare, incredible cuts waiting to become your new favourites.

Here is your cheat sheet to every cut in the box. Welcome to the culinary adventure.

THE COOKBOOK

This is our kitchen playbook, calibrated specifically for the beef in your box.

We'll be sharing some of our family's favourite recipes - from 15-minute skillet sears and live-fire BBQ to unhurried, luxurious weekend braises and the glossy butcher's pan sauces that make every cut sing.

No pretenses, no culinary gymnastics - just honest cooking that lets incredible beef (and it's cook) shine.

THE FUNDAMENTALS

Cooking beef is pure, delicious chemistry - and it’s a whole lot more fun than you think. Prepare for a few genuine kitchen lightbulb moments.

Did you know searing never actually "sealed in juices"? That incredible crust is just surface chemistry kicking off past 140°C. Discover why a dry beef browns ten times faster, how collagen slowly turns to silky gelatine over unhurried hours, and why resting is about stored heat, not the clock.

Once you understand what heat really does to meat, you will cook with total confidence.
